Red yeast rice is a natural product especially popular in Asian countries, where its health-promoting properties have been known and used by traditional herbalists since about 800. n.e. It is formed by fermentation of red yeast (Monascus purpureus) with white rice. Red yeast rice is also often used in the kitchen to improve the color and taste of food (an example of coloration and taste given by red yeast rice is Peking duck).
