Chitosan / ˈk aɪ t ə s æ n / 125 g +25% is a linear polysaccharide composed of randomly distributed D - glucosamine combined β (1 → 4) (deacetylated unit) and N-acetyl-D -glucosamine (acetylated unit). It is formed by treating shrimp shells, crab and other crustaceans with hydrochloric acid and sodium hydroxide to purify chitin followed by chitin with an alkaline substance such as sodium hydroxide. Chitosan is the only polysaccharide on the planet with a positive (cationic) charge, which gives it use as a bacteriostatic agent, flocculant and coagulant in water treatment and hundreds of other applications.

Chitosan has many commercial and possible biomedical applications. It can be used in agriculture as a seed and biopesticide treatment agent, helping plants fight fungal infections while causing germination and plant growth faster, larger and denser nutritional profiles. In wine production, it can be used as a clarifying agent, also helping to prevent spoilage. In industry, it can be used in self-healing polyurethane paint. In medicine, it is useful in bandages to reduce bleeding and as an antibacterial agent; it can also be used to deliver drugs through the skin.

Production and properties
Commercial chitosan is derived from shrimp shells and other marine crustaceans, including the photo of Pandalus borealis. [1]
Chitosan is produced on the market by the deacetylation of chitin, which is a structural component of the crustacean exoskeleton (such as crabs and shrimps) and fungal cell walls. The degree of deacetylation (%DD) can be determined by NMR spectroscopy, and the %DD in commercial chitosan is 60 to 100%. On average, the molecular weight of commercially produced chitosan ranges from 3800 to 20 000 daltons. A common method of chitosan synthesis is the deacetylation of chitin using sodium hydroxide in excess as a reagent and water as a solvent. The reaction follows first-order kinetics, although it occurs in two stages; the activation energy barrier for the first stage is estimated at 48,8 kJ mol -1 at 25 to 120 °C and is higher than the barrier for the second stage. The amino group in chitosan has a pKa value of ~6,5, leading to significant protonation in an inert solution, increasing with increasing acidity (lower pH) and a value of %DA. As a result, chitosan is water-soluble and bioadhesive, which easily binds to negatively charged surfaces [2] [3], such as mucous membranes. Chitosan improves the transport of polar drugs through epithelial surfaces, is biocompatible and biodegradable. However, it is not approved by the FDA for drug delivery.
