N-acetylcysteine

N-acetylcysteine is an acetylated derivative of the sulfuric amino acid L-cysteine. After ingestion, NAC is absorbed in the gastrointestinal tract, and then converted into L-cysteine in the liver, which in turn together with glycine and L-glutamic acid can be used to produce glutathione – an organic chemical compound with strong antioxidant properties.

Glucoraphanin

Glucoraphanin is a compound that occurs naturally in broccoli (especially in its sprouts), and its role boils down mainly to being a precursor of biologically active sulforaphane. The conversion of glucoraphanin to sulforaphane occurs under the influence of an enzyme contained in broccoli tissues. However, this is not the only way of this transformation, because it can also take place – albeit less effectively – through probiotic bacteria inhabiting the large intestine. Supplementation with glucoraphanin shows most of its effectiveness by stimulating the production of sulforaphane.

Sulforaphane

Sulforaphane is an isothiocyanate found in part of cruciferous vegetables, with certainly the highest concentration occurring in broccoli and their sprouts. In the latter, however, the most important is the germination time, because sulforaphane in high concentration is present only up to a few days after germination. Over time, its amount decreases drastically. This compound is formed from glucosinolate, more specifically from the aforementioned glucoraphanin, which is hydrolyzed by a catalyst – myrosinazil. Maintaining a constant form of sulforaphane and glucoraphanin in broccoli is in practice extremely difficult, because this enzyme is highly thermolabile – released during the grinding of plant tissue, at the same time it is denatured during cooking. For this reason, the formation of active sulforaphane is significantly reduced. It is possible to produce this compound in the large intestine under the influence of the microbiome, but formed with the participation of intestinal bacteria has a much lower bioavailability. For this reason, broccoli is best consumed raw or steamed.
