Currently, there is a fashion for spelt, its products are very popular and are attributed to them numerous healing properties. However, it is cultivated on a small scale, mainly on organic farms. It contains more protein, unsaturated fatty acids, vitamins and minerals than common wheat. It is easily digestible and easily digestible. Spelt gluten is also better than wheat tolerated by our body.
Oat
Oats began to be grown relatively late, about 2 thousand. years ago. Initially it was a weed in wheat and barley. Currently, it is one of the most popular cereals – grown both in Europe, North America and Western Asia. Unfortunately, the food sector manages only 5% of the world’s harvest. The nutritional and energy value of oats is relatively high – it contains a lot of protein, 2-3 times more good fats than other cereals and B vitamins. It is known for its strengthening and regenerating properties of the body. Noteworthy is also the highest among groats content of soluble fiber - glucan, regulating the work of the intestines.
Barley
It comes from the Middle East, where it was already known during the Neolithic period. It is the most popular groats used in Polish homes. Barley contains large amounts of vitamins B1, B2, B6, C and folic acid. Its grains contain relatively little gluten compared to wheat and rye, which is good news for those eliminating this protein in their diet. Like oats, it contains significant amounts of β-glucan, a soluble fiber that improves bowel function.

Buckwheat was first grown in Asia, mainly in China, and the beginning of its sowing is estimated at the turn of the fifth and sixth centuries AD. Buckwheat belongs to alleged cereals, that is, it is not a grain, but a plant. In recent times, despite the low soil requirements, buckwheat has been grown very rarely. Today, however, it is experiencing a renaissance due to increasingly frequent food allergies, including gluten intolerance. Buckwheat is a source of valuable biologically active compounds and active substances. The protein contained in buckwheat grains is rich in unique amino acids – lysine and methionine, which our body does not produce itself.
Rye
Common rye comes from Asia Minor, but it is grown mainly in Europe: north-eastern, eastern and central. Poland ranks second in its world production. Rye is the most resistant grain – it can be grown on all types of soils, and its quality does not significantly affect the yield. It contains gluten, but less than wheat. .
