The Bloom scale determines the quality of gelatin - the higher the greater the gelling power. In stores, you will most often find less efficient gelatin 180.
The Mesh scale determines the fragmentation. Mesh 20 means that gelatin has been sifted through a 20 mesh per inch sieve and the grains range from 1 to 1,18mm.
