Himalayan cheeses are made from the milk of Himalayan cows, which undergoes a long and careful processing process. First, the milk is boiled for an hour to remove all the fat and pasteurize from it. Then a little salt and lime juice are added to it (total is only 0,01%) for coagulation. The next stage is ironing for 2-3 days, which allows you to get rid of moisture from the cheese. Such blocks of cheese are cut into appropriate size pieces and dried in the smoking chamber for up to 20-30 days to become hard and gain a delicate, smoky taste.
